CREAMY RICE PUDDING | |
1/2 c. uncooked rice 1/2 c. water 1/2 tsp. salt 2 3/4 c. milk 1/2 c. seedless raisins 3 tbsp. butter 2 eggs, beaten 1/3 c. sugar 1/2 tsp. vanilla extract Combine rice, salt, and water; bring to boil. Reduce heat, cover, and cook until liquid is absorbed (about 8 minutes). Stir in 2 1/4 cups milk; cover and cook over low heat 1 hour, stirring occasionally. Meanwhile, cover raisins with boiling water; let stand 15 minutes. Drain. Add butter to hot pudding. Combine eggs, sugar, and remaining milk. Add to pudding; cook 5 minutes, stirring constantly. Remove from heat and add raisins and vanilla. Serve warm or cold. |
