CRISPY CHICKEN 
1 tbsp. plus 1 tbsp. butter
1 1/2 oz. corn flakes
1 tbsp. grated Parmesan cheese
1 tsp. onion powder
Salt if desired
1/8 tsp. ground red pepper
8 oz. chicken drumsticks
8 oz. chicken breast, split

Recipe can be doubled and use 1 whole chicken. Preheat oven to 400 degrees. Place butter in 13 x 9 inch pan. Place pan in oven for 3 to 5 minutes until butter melts.

In food processor, combine corn flakes, cheese, onion, salt and pepper. Process until flakes are chopped. Place crumbs in a large plastic bag. Remove skin from chicken, coat each piece in melted butter. Place chicken in bag with crumbs. Shake to coat and place in pan. Bake 30 minutes, turn chicken and bake until done.
