SWEET CORN FRITTERS 
1 egg
1/4 c. milk
1/2 c. all-purpose flour
1 c. fresh corn kernels (1 lg. ear)
Pinch salt
2 tsp. baking powder
Oil for frying

In a medium bowl beat together egg and milk. Add flour and mix well. Stir in corn kernels and salt. Just before cooking add baking powder.

Heat about 1 1/2 inches oil in a deep fryer or frying pan. Drop batter by spoonfuls into oil and fry on both sides just until crisp and golden, about 1 minute. Drain on paper towels and serve immediately. Makes 14 fritters.
