SWEET CORN (PUDDING) 
12 ears of corn
1 tbsp. sugar
1 qt. milk
Pinch of salt
2 tbsp. flour
1 tbsp. butter
3 eggs, separated

Grate the corn and mix it in the milk, rubbing well to get hulls free. Then rub through a fine sieve to get rid of hulls. Work the flour and butter to a cream, then add in the sugar and well beaten egg yolks. Then add the beaten egg whites. Add all to the corn and milk mixture along with the salt. Bake at 350 degrees about an hour (until a knife stuck in the center comes out clean).
