BASIC HERB JELLY 
3 c. fruit juice (your choice)
1 c. fresh herb
2 tbsp. fresh or frozen lemon juice or vinegar
1 pkg. powdered pectin
4 c. sugar
1/2 tsp. butter
1 fresh herb sprig for each jar
3 - 4 drops food coloring (optional)

In saucepan, make herb infusion with juice and herb. Strain. Take infusion and mix with lemon juice, coloring, pectin and butter. Mix well. Put over highest heat, stirring constantly until mixture comes to a full rolling boil. Mix in sugar. Continue stirring, return to a full rolling boil. Boil hard 1 minuets. Remove from heat. Skim off foam. Pour into hot sterilized jars with herb sprigs in each jar. Seal jars.
