ATLANTIC CITY SALT WATER TAFFY 
1 cup sugar
1/2 tablespoons cornstarch
2/3 cup corn syrup
1 tablespoon butter
1/2 cup water
1/2 teaspoon salt
flavoring

Combine sugar and cornstarch, put into a saucepan, and add corn syrup, butter, and water.

Stir until boiling point is reached, and boil until mixture reaches 256°F or until a small portion forms a ball when tested in cold water.

Add salt, pour onto a greased slab and allow to cool slightly until the mixture can be handled. Pull until light in color.

Divide into separate portions, and color and flavor each portion as desired, while it is being pulled.

Lemon, orange, peppermint, lime, strawberry, or pineapple flavors may be used, and pink, green, yellow or orange color pastes. (Don't use too much color - the candies are usually quite pale and pastel in tint).

To make red striped kisses, have one portion of candy brightly colored red and let warm near the oven. Lay the large piece of pulled taffy on the marble slab. On the upper side, lay two or three parallel strips of red taffy; turn the piece over and lay two or three read strips on that side.

Pull out until 1 1/2 inches wide and 3/4 of an inch thick. Cut into pieces with a scissors and wrap in wax paper. Twist ends of paper to seal.

I tried this recipe and it turned into hard candy. My candy thermometer reads 190°F when water is boiling, so I guess its just about 22 degrees off, so I boiled the candy to 230°F and it turned into rock candy. I tried the hard ball test and I thought it worked. I don't know if the candy was boiled too hot, or too cold, but this is the second time this has happened.

Just a few comments. Be sure to use a candy thermometer (and it must be accurate.) Undercooked, the sugar will not dissolve and your ingredients could separate when cooling. Overcooked, too much water will boil off and the sugar will begin to recrystalize.

Also, measure every ingredient precisely. Do not use any substitutions, and if possible, use the finest quality ingredients you can buy. Cheaper ingredients can have impurities that can ruin candy recipes.

Do not overcook the recipe. Aside from boiling off too much moisture, overcooking can lead to burning, possibly caramelize the sugar, then the candy will be rock hard.

On a side note, if you are watching your salt intake, you can use either unsalted or salted butter depending upon taste.

I think this is a very good taffy recipe. I too had a "rock hard problem @ 256°F". I've made several batches and it comes out perfectly at 251°F. Thanks for sharing.

I made this and it tasted really good, but the taffy kept on getting stuck to my hands. Every one that makes this use vanilla, it tastes so good.

This is a great recipe but like Hannah said it gets stuck to your hands a lot but other than that its really cool to not have to buy it I mean like what a waste of money!!! Its also really fun to make I made some with my friends and we had a bunch of fun except like every one got kind of made at each other because we got in a big fight at summer school super great taffy though!!! :)

I haven't tried this recipe yet, but in another recipe, it says to keep your hands buttered to keep the taffy from sticking.

For the cooks getting the taffy stuck. Set a stick of butter aside. Make sure your hands are always coated in butter while pulling, will stop it from sticking.

For those getting hands stuck, try using a pair of vinyl, powder-less exam gloves (to prevent sticking). For heat protection (my kids are helping) I put a pair of knit gloves underneath the vinyl.
