POTATO DOUGHNUTS 
1 c. boiled, sliced or mashed potatoes
2 eggs
1 c. buttermilk
2 tbsp. butter
4 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Mix potatoes and eggs. Stir in buttermilk and butter. Blend flour and rest of dry ingredients. Add to potato mixture. Chill dough for easier handling. At least 1 hour. Roll out to 1/2 inch thickness and cut. Fry in deep fat at 375 degrees until golden brown. Can dust in brown paper bag with powdered sugar or granulated sugar. You can dip in icing if you prefer. Makes about 36 doughnuts.
