POTATO DOUGHNUT 
3 tbsp. shortening
3/4 c. sugar
3 eggs
1 c. mashed potatoes
2 3/4 c. flour
4 tsp. baking powder
1 tsp. salt
3/4 tsp. nutmeg
1/4 tsp. mace
1/2 c. milk

Cream shortening and sugar. Blend in beaten eggs. Stir in dry ingredients and liquid. CHILL 2 hours. Lightly flour board and pin, roll out dough 1/2 inch thick and cut with doughnut cutter. Drop in 4 inches hot fat and turn once until brown.
