HEARTY HAMBURGER VEGETABLE SOUP 
1 lb. ground beef
1 c. chopped onion
2 cloves minced garlic
2 tsp. salt
1/2 tsp. oregano leaves
1/2 tsp. pepper
1 lb. can tomatoes, cut up
1 c. chopped celery
1 c. sliced potatoes
1 c. sliced carrots
1 c. chopped cabbage
1 c. diced zucchini
1 (10 1/2 oz.) can beef broth
2 beef bouillon cubes
4 c. water
1/3 c. uncooked regular rice

Cook beef in 6 quart Dutch oven until begins to turn color, add onion and garlic. Cook until brown. Drain excess fat. Add rest of ingredients except rice, cover and simmer 1/2 hour. Add rice and simmer until rice is tender. Can double or triple this. Good the second day.
