2 cans Libby's corned beef 2 potatoes, peeled and diced 1 whole white onion, sliced thinly 1/3 cup homemade sofrito salt, pepper, adobo and oregano, to taste 1 cup of broth, beer or water 9 olives, sliced 2 tablespoons tomato sauce In a skillet, add a little olive oil and brown onion slices til somewhat wilted then remove. Add sofrito, olives, spices and tomato sauce and heat up. Add corned beef and break up roughly and mix around gently. Add onion back and remaining ingredients and mix well. Simmer for 20 to 25 minutes. Serve with rice. Submitted by: Andy Natal |
