DIABETIC FRUIT BARS 
1/2 c. dates
1/2 c. raisins
1/2 c. prunes
1 c. water
1/2 c. butter
3 eggs
1 tsp. baking soda
1 tsp. vanilla
1/4 tsp. salt
1 c. flour
1/2 c. chopped nuts

Coarsely chop dates, raisins and prunes. Put in a small pan, add 1 cup water and bring to a boil. Cook for 1 minute. Put fruits and juices in a mixing bowl. Let cool.

Then add butter, eggs, baking soda, vanilla and salt and mix well. Stir in flour a little at a time. Fold in nuts and spread batter in a greased 9 inch square pan. Bake in a 350 degree oven 25 to 30 minutes. Cool and cut in squares.
