CHEESE PITA 
1 lb. feta cheese
8 oz. cream cheese, softened
2 lbs. cottage cheese (dry and/or reg. sm. curd)
6 eggs, beaten
1 box filo dough
Melted butter & olive oil (50/50)

For rolls, use 3 layers of filo. Butter between layers. For Spinach Pita - use fresh spinach; boil first. Use a double handful per batch until filling is light green in color. Bake at 400 degrees for 10 minutes; then at 350 degrees for 45 minutes. Check after 30 minutes. To make in a big pan (not rolls), bake at 400 degrees for 10 minutes then at 350 degrees for 1 hour and 10 to 15 minutes or until it feels firm when you shake pan.
