SCALLOPED PINEAPPLE 
3 tbsp. flour
3/4 c. sugar
1/2 c. pineapple juice
2 cans pineapple, chopped
1 c. shredded Cheddar cheese
1 stick butter
1 roll Ritz crackers

Mix flour, sugar and juice together. Add pineapple, cheese and 1/2 roll crushed Ritz crackers. Put in buttered casserole dish. Melt butter and pour over the top. Bake for 15 minutes at 350 degrees. Take out and put rest of crushed Ritz crackers on top. Bake for 15 more minutes. Serve with meat loaf or ham.
