SHRIMP CREOLE 
1 1/2 c. chopped onion
1 c. finely chopped celery
2 med. green peppers, chopped
2 cloves garlic, minced
1/4 c. butter
1 can (15 oz.) tomato sauce
1 c. water
2 tsp. parsley
1 tsp. salt
1/8 tsp. red pepper
1 lb. raw shrimp

Cook and stir onions, celery, peppers and garlic until onions are tender. Add tomato sauce, water and seasonings. Simmer uncovered for 10 minutes. Stir in shrimp. Add water if needed. Cook over medium heat 10 to 20 minutes. Serve over rice.
