PARTY POTATOES 
6 med. potatoes, boiled with jackets
1/2 c. green onions, chopped tops & all
1/4 c. butter, melted
1 can cream of chicken soup
2 c. sour cream
1 c. Cheddar cheese, grated
Corn Flakes or crackers, crumbled
3 tbsp. butter, melted

Boil potatoes with jackets on. Cool, peel and dice. Add onions to potatoes. In a greased casserole dish put potatoes and onions. Mix together butter, soup, sour cream and cheese. Pour over potatoes and onions. Add a layer of crumbled Corn Flakes or crackers, topping with melted butter. Bake at 350 degrees for 45 minutes. Serves 16 to 20 people. May be prepared ahead and frozen. If frozen, leave off Corn Flakes until ready to reheat.

OPTIONAL: Can add cooked bacon (in bits) over soup mixture before you top with Corn Flakes.
