CHEESED CAULIFLOWER 
1 med. head cauliflower, cooked
1/4 c. fine dry bread crumbs
1 lg. onion, thinly sliced
Dash of pepper
3 tbsp. olive oil
1/4 tsp. salt
1/4 c. grated cheddar cheese

Put olive oil in a 1-quart casserole. Add onion. Cook for about 6 minutes, or until onions are limp and tender. Stir once or twice. Add salt, pepper and bread crumbs. Place cauliflower in original casserole. Top with hot onion mix. Sprinkle cheese over top. Cook for 2 1/2 to 3 1/2 minutes, or until cheese is melted and cauliflower is piping hot.
