FILLING: 2 lbs. cream cheese 1 lb. feta cheese 1/2 to 3/4 c. grated Parmesan cheese (Use all fresh ingredients for best results.) 2 pkgs. frozen spinach (10 oz.), thawed & drained 2 eggs Phyllo sheets Mix ingredients together well and reserve. Feta cheese is strong and should be added 4 ounces at a time to get the desired flavor you like... you need not use all required or you may wish to add more. Use thawed phyllo sheets. Work one at a time. Use melted butter and brush one sheet. Cut the sheet into 4 strips lengthwise. Place a teaspoon of mixture at the end of the strip and fold it up military style (flag folding). Place in a container to freeze. Use waxed paper on cookie sheets or layer in closed box separated by waxed paper. When ready to use... preheat oven to 375 degrees. Spray cookie sheets lightly with Pam.. Remove excess. Bake until phyllo is golden. Don't thaw before baking. Bon Apetite! |
