GREEK MEATBALLS (KEFTETHES) 
2 lbs. ground beef
1 med. onion, chopped
2 cloves garlic, minced
2 eggs
1/2 lemon, juiced
2 tbsp. grated Parmesan cheese
2 tbsp. evaporated milk
3 dry bread slices
2 tbsp. chopped parsley
Salt and pepper to taste

Mix all ingredients well. Form into small balls. Roll in flour. Bake in 400 degree oven for 20 minutes. Turn and cook 10 minutes more. They can be served in tomato sauce or plain.

TOMATO SAUCE FOR MEAT BALLS:

1 (12 oz.) can tomato paste
2 (15 oz.) cans tomato sauce
1/2 c. ketchup
1 (13 3/4 oz.) can chicken broth
2 cans water
1/2 c. butter
1 tsp. salt
1 tsp. pepper
1 bay leaf
1 glove garlic
1 heaping tbsp. chicken base

Combine all ingredients and cook until thick. Add meat balls and cook until most of the sauce is absorbed. Can be served on spaghetti or noodles.
