CHEESY HASH BROWNS 
2 lb. pkg. hash browns
1/2 c. chopped onions
1/2 c. butter, melted
1 can cream of chicken soup
1 tsp. salt
1/4 tsp. pepper
2 c. grated cheddar cheese
1 c. milk
1 c. sour cream

Put hash browns, butter, salt, pepper, onions and cheese in 13 x 9 x 2 pan. Mix soup, milk and sour cream. Pour over top and bake at 350 degrees for 1 to 1 1/2 hours. Serves 12.

Instead of buying hash browns - get a couple of large potatoes. You can either remove the skin or if you want to use the skin - just wash it really well... then using largest holes in grater box, (same as grating coleslaw)... grate the potatoes. Easy, simple and better than anything store bought... this same procedure works for making patties and just frying them - as in "potato cakes"..
