SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
2 eggs
1/3 stick butter
1/2 c. milk
1 tsp. vanilla

Mix all ingredients together and pour into a greased baking dish. Cover with topping.

Topping:

1 c. brown sugar
1/3 c. flour
1 c. chopped pecans
1/3 c. melted butter

Mix thoroughly and sprinkle over souffle.

Bake 35 minutes at 350°F.
