ELSIE'S PUMPKIN CAKE 
1 1/2 c. cooking oil
2 c. white sugar
4 eggs
2 c. flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 tsp. allspice
2 tsp. vanilla
2 c. pumpkin
1 c. raisins
1 c. nuts
1 c. crushed pineapple

Beat eggs, oil, and sugar. Mix flour, soda, baking powder, salt and spices. Add dry ingredients and the pumpkin. Then add vanilla, nuts and raisins, and drained pineapple. This is a large recipe and makes a cake 9 x 13 inches plus 6 or more cup cakes. Bake at 325 degrees for 1 hour. Freezes well.

FROSTING:

1 (8 oz.) pkg. cream cheese
1 lb. powdered sugar

Blend and add vanilla and nuts if desired.
