PUMPKIN CAKES | |
4 (1 lb.) coffee cans, greased, floured, lined with wax paper circles 3 1/2 c. flour 3 c. sugar 4 eggs 1 c. chopped nuts 1/4 tsp. ginger 2 tsp. cinnamon 1 can pumpkin OR 2 c. mashed boiled pumpkin 1 c. oil 2/3 c. water 1 c. white raisins 1 1/2 tsp. nutmeg 2 tsp. baking soda 1 tsp. salt Mix sugar and oil. Add eggs (one at a time). Sift dry ingredients and add pumpkin. Mix well, add raisins and nuts. Fill to the 2nd ring of prepared coffee cans. Bake at 325 degrees for 1 hour. Make a wonderful holiday gift. |
