SPINACH MADELINE | |
2 pkgs. frozen spinach 4 tbsp. butter 2 tbsp. flour 2 tbsp. chopped onion 1/2 c. evaporated milk 1/2 c. vegetable liquid 1/2 tsp. pepper 3/4 tsp. garlic salt 3/4 tsp. celery salt 1 tsp. Worcestershire sauce 6 oz. roll Jalapeno cheese, cut in sm. pieces Red pepper to taste Cook spinach; drain and reserve liquid. Melt butter in saucepan over low heat. Add flour, stirring until blended and smooth but not brown. Add onion and cook until soft but not brown. Add liquid slowly, stirring constantly to avoid clumps. Cook until smooth and thick. Add seasonings and cheese. Stir until melted. Combine with cooked spinach. May be served immediately or put into a casserole and topped with buttered bread crumbs. The flavor is improved if the latter is done and kept in the refrigerator overnight. This may be frozen. |
