SPINACH MADELINE 
2 pkg. frozen chopped spinach, cooked and drained
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion
1 tsp. Worcestershire sauce
1/2 c. evaporated milk
1/2 c. vegetable liquid, from cooked spinach
6 oz. pepper cheese

Melt butter and stir in flour until blended. Add onion and cook, covered, until soft. Add liquid, stirring constantly. Cook until smooth and thick. Add cheese, cut in small pieces. Stir until melted. Add spinach and stir thoroughly. Place in casserole, sprinkle with seasoned bread crumbs and bake at 350 degrees until bubbly.

I have been using this recipe since my mother-in-law passed it on to me 15 years ago. A regular at every holiday meal. I have started adding oysters (substitute some of spinach liquid with oyster juice).
