SPANISH RICE PIE 
1/2 c. water
2 c. tomato juice, divided
3/4 c. uncooked regular rice
1 1/2 c. bran cereal
1/2 c. milk
1/2 tsp. salt
1 lb. hamburger
1/4 c. catsup
2 tbsp. chopped green pepper
1/2 tsp. chili powder
1/2 to 1 c. shredded cheddar cheese

In large saucepan bring water and 1 cup tomato juice to boil. Stir in rice. Cover and cook over low heat about 20 minutes.

Crush cereal to measure 3/4 cup. Mix in milk, salt, and hamburger. Press in 9-inch pie pan and form meat pie shell. Combine cooked rice with remaining tomato juice, catsup, green pepper and chili powder. Spoon into meat shell.

Bake in 350 degree oven about 30 minutes. Ready when meat pulls away from pan. Sprinkle cheese on top and bake until cheese melts.

Serves approximately 6.
