GOOD FOR YOU COOKIES 
2/3 c. butter (room temperature) or substitute equal amount of prune puree*
2/3 c. light brown sugar
2 eggs, slightly beaten or substitute with egg substitutes or powdered eggs
1 1/4 c. old fashioned oatmeal
1/4 c. bran or substitute another 1/4 c. oatmeal or other dry cereal
1 1/2 to 1 3/4 c. white flour
2 tbsp. orange or apple juice
1 tsp. baking soda
1/2 tsp. salt (optional)
1 c. dried fruit (use raisins, apples, cranberries, cherries, etc.)
1 tsp. orange rind (optional)
1 tsp. cinnamon
1 c. white or dark unsweetened chocolate chips or chunks

*I have also used mashed bananas, but they spread a little flatter than with butter.

Preheat oven to 375°F. Cream butter or puree with sugar and eggs. Add all dry ingredients into a large bowl; mix well. Add slowly and mixing well the wet to the dry ingredients. Stir in remaining fruit and chips. Mix just until moistened. Place by rounded tablespoon on a lightly greased cookie sheet (or sprayed lightly with Pam) and bake 8 to 12 minutes. They should only be golden brown on top. Let cool 2 minutes on cookie sheet; transfer to wire rack to continue to cool. They freeze well; that is, if you have any left!
