CARAMEL RITZ BITS | |
2 boxes Ritz Bits 1 c. dry roasted peanuts 1/2 c. butter 1 c. granulated sugar 1/2 c. + 1 tbsp. corn syrup 1 tsp. vanilla 1 tsp. baking soda Preheat oven to 250 degrees. Combine crackers and nuts in baking pan or jelly roll pan. In saucepan, bring butter, sugar and corn syrup to a boil. Cook for 5 minutes. Remove from heat and add vanilla and soda. Pour over crackers and stir to coat crackers. Bake for 1 hour, stirring every 15 minutes. Pour onto waxed paper and separate crackers. Allow to cool. Store in airtight container. Yield: 9 cups. |
