8 oz. sliced smoked bacon, preferably thick cut
1 1/2 oz. brown sugar
Honey mustard
Preheat oven to 375 degrees. Separate bacon slices. Place brown sugar in a shallow bowl. Spread one side of each bacon slice with a thin layer of honey mustard. Dip both sides of each bacon slice in the brown sugar to coat thoroughly. Place the bacon on a rack over a pan to catch the drippings. Bake in upper third of oven 20 minutes. Finish browning under broiler, watching closely. Let cool slightly but not too long or bacon will stick to rack. Drain on paper towels. Serve at room temperature. 6 to 8 portions.
