SWEET & SOUR ROAST 
1/2 c. vinegar
1/2 c. apple juice
1/2 c. chili sauce
2 tbsp. brown sugar
1 tsp. salt
1/4 tsp. pepper
About 4 lb. boneless beef roast
2 med. onions, sliced
1 c. sliced celery
3 cooking apples, cored & sliced in wedges
2 tbsp. cornstarch
1/4 c. cold water
1 c. sliced green sweet peppers (opt.)

In large food storage bag, combine first 6 ingredients, mix well. Place meat in bag and seal. Chill 12 to 24 hours, turning bag occasionally. Remove meat from bag, place in 3 quart casserole. Top with onions, celery and peppers. Pour on marinade.

Cover and roast at 325 degrees for 2 1/2 or 3 hours, until meat is tender. Add apples for last 10 minutes of cooking. Remove meat, vegetables and apples. Thicken pan juices with cornstarch mixed in 1/4 cup water. Melts in your mouth!!
