ZUCCHINI CASSEROLE 
6 c. diced zucchini, skin left on
4 or 5 carrots, diced
Cheddar cheese
2 onions, diced
1 can cream of chicken soup
1 c. sour cream
1 box Stove Top dressing (herb)
1 stick butter

Boil 3 vegetables together for 5 minutes. Drain and put in chicken soup and sour cream. In glass 9 x 13 pan melt butter and put 1/2 box Stove Top dressing. Save the other 1/2 box. Put vegetable mixture on top of dressing. Then rest of dressing (dry) sprinkle cheese on top. Bake 400 degrees for 30 to 45 minutes.
