BROCCOLI SOUFFLE 
1 pkg. frozen broccoli
2 eggs, beaten
1 can cream of mushroom soup
Cheddar cheese, grated
1 onion, chopped
1 c. mayonnaise

Mix all together except the cheese. Place in a casserole dish and cover with cheese. Bake at 375 degrees for 55 minutes. Spinach may be used in place of the broccoli.
