DEL MONACO POTATOES 
8 med. potatoes
8 tbsp. butter
6 tbsp. flour
2 1/2 c. light cream or half-and-half
1/2 tsp. salt
1/4 tsp. pepper
1 c. grated sharp cheddar
1/2 c. fine dry bread crumbs

Preheat oven to 375 degrees. Wash, peel and dice potatoes. Boil and cook, then drain. Put in 2-quart lightly greased casserole. In medium saucepan, melt 6 tablespoons butter. Blend in 6 tablespoons flour. Stir with whisk. Gradually add cream; heat to boiling, stirring constantly. Add 1/2 teaspoon salt and 1/4 pepper. Pour over potatoes; top with cheese.

Melt 2 tablespoons butter; stir in bread crumbs and mix until coated. Sprinkle crumbs over casserole. Bake until hot, 25-30 minutes.
