SHRIMP AND RICE | |
1 lb. shrimp 1 tsp. Worcestershire sauce 2 tbsp. all-purpose flour 1 tsp. paprika 1/4 c. butter 1/2 c. chopped celery 1/3 c. chopped bell pepper 1/4 c. minced onion 3 c. hot cooked rice 4 slices bacon salt and pepper to taste Clean and devein shrimp; sprinkle with Worcestershire sauce. Roll in mixture of flour and paprika. Melt butter in large skillet. Add celery, green pepper and onion. Cook over low heat about 5 minutes. Add shrimp; increase heat and cook about 5 minutes more or until flour browns and shrimp turns pink. Add hot rice and a small amount of water, if needed. Fry bacon until crisp; crumble and add with bacon drippings to shrimp. Add salt and pepper to taste. Serve hot. |
