CRUNCHY PEA SALAD | |
20 oz. pkg. frozen peas, uncooked 1 c. celery, sliced thin 1 can (5 oz.) water chestnuts, sliced 3-4 green onion, sliced 1/4-1/2 lb. baby frozen shrimp or 8 slices bacon crisp, sm. pieces 1 c. mayonnaise or Miracle Whip (thin with vinegar & 2 tbsp. sugar) 1/3 slivered walnuts, almonds or sunflower seeds 1 1/2 c. fresh cauliflower, sliced Add all ingredients except shrimp, bacon and nuts. Let set several hours or overnight in refrigerator. Add bacon/shrimp and mix just before serving. Garnish with nuts. Try fresh spinach leaves for a base. |
