COUNTRY FRIED CATFISH | |
12 pan dressed catfish 2 eggs, beaten 1 c. flour 1/4 c. milk 1 tbsp. lemon & herb seasoning 1 tbsp. Accent 1 c. cornmeal Combine eggs, milk and seasoning. Dip fish into flour first and into egg wash and finally into cornmeal. Fry in deep fat, 350 degrees, for 3 to 5 minutes or until fish flakes easily when tested with a fork. Drain on absorbent paper. Serve with hush puppies and tartar sauce. Yield: 11 to 12 servings. |
