HOLIDAY DATE PUDDING | |
2 tsp. baking soda 2 c. boiling water 2 c. chopped dates 1 c. butter 1 1/2 c. sugar 2 eggs, beaten 3 1/2 c. sifted flour 2 tsp. baking powder 1/2 tsp. salt 2 tsp. vanilla 1 c. chopped nuts 1/2 c. chopped cherries Combine soda, water and dates. Cream butter and sugar, add eggs, mix. Use 4 (#2 1/2 cans) or loaf pans. Pour equal amounts of batter into greased cans. Bake in a slow oven at 325 degrees for 1 1/4 hours or until done. Remove from can; cool, wrap and freeze. Slice and serve with butter sauce or whipping cream. It is more moist if left in refrigerator a day after thawing. |
