ED'S RICE PUDDING | |
1/2 c. rice, cooked, rinsed & drained 4 c. milk 1/2 c. raisins 1/2 c. sugar 4 tbsp. cornstarch 3 eggs, separated, room temp. 1/4 tsp. cream of tartar 1/4 c. sugar 1/2 tsp. vanilla Into saucepan put raisins and water to cover, bring to a boil. Remove from heat, let plump, drain. Cook rice according to package directions, rinse and drain. In a double boiler, put milk, rice, 1/2 cup sugar, cornstarch; mix over heat, stirring constantly. Beat yolks, add a little hot milk, mix, then add to milk mixture. Bring to a boil until thick. Add vanilla and raisins. Pour into baking dish. Beat egg whites, cream of tartar and add sugar. Beat until peaks form. Spread over custard. Bake at 350 degrees for 10 minutes or more. Serve warm. |
