HAM QUICHE 
Cooking time: 30 minutes. Serves 8.

PASTRY:

1 1/2 c. sifted flour
1/2 c. butter, cut into sm. pieces
1 egg yolk
3 tbsp. cold water

Mix with hands. Add flour, make ball, wrap in wax paper. Put in freezer 30 minutes, then take out. Knead dough 2 minutes. Add flour, roll out, put in 9 inch pie plate.

1/2 lb. boiled ham (baked Virginia), cut into sm. pieces
1/4 lb. Swiss cheese, in sm. pieces

4 eggs
1 tbsp. flour
1 1/2 c. milk
Black pepper

Pour over ham and cheese. Add 3 tablespoons butter, melted, on top. Bake at 400 degrees for 30 minutes.
