JANETTE SIMON'S REFRIGERATOR ROLLS | |
1 tsp. sugar 1 c. warm water (hot to touch) 2 pkgs. yeast Mix above together. 2 c. scalded milk 3/4 c. sugar 4 tsp. salt 1 stick butter Mix above together. 2 eggs, beaten well 10-11 c. flour Mix first 3 ingredients together in a small bowl and set aside. Mix next 4 ingredients together in saucepan until milk is just scalded. Remove from heat and allow to cool. Combine 2 mixes together when cool, add 2 eggs and stir. Add flour until doughy (amount of flour depends on weather). Let rest 10 minutes. Knead for 10 minutes. May now stay in refrigerator for 7 days. Or can be made into rolls or loaves and frozen. Also can be used immediately. Bake on light pans. Rolls should be baked at 425 degrees for 15-20 minutes. Makes 3 dozen rolls. |
