CRUSTLESS QUICHE 
1/2 lb. mushrooms, thinly sliced
4 tsp. butter
4 eggs
1/2 pt. (1 c.) sour cream
1/2 c. grated Parmesan cheese
4 tbsp. flour
1 tsp. onion powder
1/4 tsp. salt
1/2 pt. sm. curd cottage cheese
4 drops Tabasco sauce
2 c. shredded cheese
6 oz. diced meat, ham, etc. (can be substituted with vegetables)

Preheat oven to 350 degrees. In medium skillet, saute mushrooms in butter until tender. In blender, combine eggs, sour cream, cottage cheese, Parmesan cheese, flour, onion powder, salt and Tabasco sauce. Pour mixture in a bowl. Stir in mushrooms, grated cheese and diced meat or vegetables.

Pour into quiche pan. Bake for 45 minutes. Quiche should be puffed and golden brown. Let stand 5 minutes before cutting. Serves 8.
