GLOUCESTER BAKED FISH 
2 lb. whiting or other fish fillets
3/4 c. bread crumbs
1/4 c. grated Romano cheese
1 clove garlic, minced
Black pepper to taste
1 tsp. salt
2 tbsp. chopped parsley
2 eggs
3/4 c. vegetable oil
2 c. sliced onion
2 c. sliced green bell pepper
2 c. stewed tomatoes

Cut each fish fillet into 3 pieces. Combine bread crumbs, cheese, garlic, pepper, salt, and parsley in small bowl. Beat eggs in separate small bowl. Dip fish in beaten egg; roll in crumb mixture. Heat oil in skillet; add fish and fry. Drain oil from skillet into saucepan. Saute onions and green pepper in hot oil in saucepan. Add tomatoes; cook until vegetables are tender. Place fish in casserole dish; pour sauce over fish. Bake, covered, at 350 degrees, for 30 minutes. Good over spaghetti and sprinkled with Parmesan cheese. Makes 6-8 servings.
