BEST BAKED FISH EVER 
2 lbs. bland white fish (orange roughy is ideal)
1 c. milk
2 oz. Kosher cognac
2 tbsp. olive oil
1 med. onion
Salt or seasoned salt
pepper
Garlic powder
Basil, chopped (or tarragon, cilantro, thyme, or other to taste
Tomatoes, sliced

Wash fish. Sprinkle with salt, pepper, garlic and basil to taste; let stand 20 to 30 minutes. While fish is seasoning, saute onion in olive oil until light brown. Add milk and cognac to onions and pour milk & onion mixture over fish. Place slices of tomato on top of fish. Bake at 250 degrees for 15 to 20 minutes.
