SKILLET FRENCH FRIED POTATOES 
3 lg. potatoes, 2 1/2 lb.
1 qt. pure vegetable oil
Salt

Wash and pare potatoes. Cut lengthwise into 3/8 inch slices. Cut slices lengthwise into 3/8 inch strips. Wash in cold water; dry well with paper towels. Pour oil into 10 inch skillet. Heat to 365 degrees. Carefully lower a few potatoes at a time into hot fat with a slotted spoon. Fry 5-7 minutes or until potatoes are golden brown and tender. Remove with slotted spoon; drain well on paper towels. Sprinkle with salt. Keep warm in oven while frying rest of potatoes.

OVEN FRENCH FRIES:

3 lg. potatoes, 2 1/2 lb.
1/3 c. pure vegetable oil
Salt

Wash and pare potatoes. Cut lengthwise into 3/8 inch slices. Cut slices lengthwise into 3/8 inch strips. Wash in cold water; dry well with paper towels. Put into shallow pan; pour oil over. Toss gently to coat potatoes. Cook in 450 degrees for 30-40 minutes, or until tender and golden brown, stirring occasionally. Drain if necessary on paper towels. Sprinkle with salt. Makes 4 servings.
