DAD'S ITALIAN SANDWICHES 
All sandwiches should be served on Italian rolls.

Basic recipe (ingredients can be increased or decreased according to your taste). 2-3 tbsp. water or milk Salt & pepper to taste

In bowl, scramble eggs with water or milk; add salt and pepper. Melt 2 tablespoons butter in skillet; add egg mixture. Cook until about halfway done. Add the filling of your choice:

1/4 c. (maybe more) chopped can tomatoes

OR

1/2 c. (maybe more) sliced green peppers

OR

1/2 c. pre-cooked and peeled boiled potatoes cut in quarters

Mix filling in with egg; cook over low heat until filling is cooked through. Stuff into Italian rolls.
