CUSHAW PIE 
1 1/2 c. cooked cushaw, mashed & drained
1 c. sugar
1/4 stick butter, melted
2 eggs
Dash salt
2 tsp. lemon flavoring
2 tsp. cornstarch
1/4 c. milk

Mix salt, cornstarch and sugar together; add remaining ingredients until smooth. Pour into unbaked pie shell. Bake at 350 degrees until pie is set (about 30 minutes). Top with meringue, if desired.
