BANANA-NUT CORNBREAD 
1/3 c. sugar
1/2 c. flour
1 c. coarse ground yellow cornmeal
1 tsp. salt
3 tsp. baking powder
2 med. eggs, beaten
2 med. sized ripe bananas, mashed smoothly
1/8 c. oil
1 c. chopped pecans

Blend dry ingredients together thoroughly. Beat eggs, bananas and oil together. Fold dry ingredients into egg mixture until thoroughly moistened. Fold in pecans last. Bake in Pam sprayed 8 1/2 inch x 4 1/2 inch loaf pan at 350 degrees for 50 minutes or until golden brown. Yield: 1 loaf.
