MAKE AHEAD MASHED POTATOES 
3 lb. med. size potatoes, about 9
1 1/2 c. sour cream
4 tbsp. (1/2 stick) butter
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. packaged bread crumbs
1 tbsp. butter

Boil potatoes and mash. Add sour cream, butter, salt and pepper. Toss bread crumbs in melted butter. Can cover and refrigerate overnight.

Bake covered in a slow oven (325 degrees) for 1 hour. Sprinkle bread crumbs over potatoes. Continue baking, uncovered for 30 minutes. Serves 6-8.
