MAKE-AHEAD POTATOES 
3 (2 lb.) pkgs. frozen hash brown potatoes or 10 potatoes, cooked in skins, peeled & mashed
1 stick butter
1 lb. Velveeta cheese
1 c. sour cream
1/3 c. grated onion
1 tsp. salt
1/8 tsp. pepper

Melt butter and cheese on low heat. Add sour cream and seasonings to potatoes. In 13 x 9 inch glass casserole, layer potatoes alternating with cheese sauce. Bake uncovered at 350 degrees for 45 minutes. This can be made ahead and refrigerated. Bake at serving time. It is delicious and always much enjoyed!
