SPICED BEETS 
2 cans string beets, drained
1 c. raisins
1 lg. orange and skin, ground
1/4 c. vinegar
1 c. beet juice
1 c. sugar
2 tbsp. cornstarch
Pinch of salt

Mix beets, raisins, and orange. Mix and cook remaining ingredients until thick. Add beet mixture to the sauce and heat thoroughly. This dish can be prepared the day before and reheated easily by putting it in the top of the double boiler over simmering water.
