VEAL PARMESAN 
1 lb. veal round steak, cutlets
1/2 c. onion, chopped
2 garlic cloves, minced
1 1/2 tbsp. butter
2 heaping tbsp. fresh Parmesan cheese
1/3 c. bell pepper, chopped
1/2 c. tomato sauce
1/4 tsp. sugar
1/4 tsp. dried basil, crushed
1/2 c. Mozzarella cheese, shredded

Cook onions and garlic in butter in skillet until tender. Push to one side and add cutlets. Brown on both sides. Sprinkle with Parmesan cheese and add bell pepper to skillet. Combine tomato sauce, sugar and basil. Pour over cutlets, stirring in onion mixture. Cover and cook over low heat 20 to 25 minutes. Sprinkle Mozzarella cheese over veal; cook two minutes more.
